Ingredients
- 1 pound chicken breast (boneless, skinless, thinly sliced or butterflied)
- 1 tablespoon avocado oil
- 4 cup green cabbage (shredded)
- 1 cup carrots (shredded)
- 1 red bell pepper (thinly sliced)
- 0.25 cup almond butter (unsweetened)
- 2 tablespoon low-sodium tamari
- 2 tablespoon rice vinegar
- 1 tablespoon fresh lime juice
- 1 teaspoon fresh ginger (grated)
- 0.25 teaspoon red pepper flakes
- 2 tablespoon water (to thin dressing)
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Season chicken breast with a pinch of black pepper (not listed separately in ingredients as this is to taste). Heat avocado oil in a large skillet over medium-high heat. Add chicken and pan-sear for 5-6 minutes per side, until cooked through. Remove and let rest for a few minutes, then slice against the grain.
- While chicken cooks, prepare the slaw. In a large bowl, combine shredded green cabbage, shredded carrots, and thinly sliced red bell pepper. Toss well.
- In a separate small bowl, whisk together almond butter, low-sodium tamari, rice vinegar, fresh lime juice, grated fresh ginger, red pepper flakes (if using), and water until smooth and pourable.
- Divide the cabbage slaw among four bowls. Top with sliced chicken breast. Drizzle generously with the almond dressing. Garnish with fresh cilantro, if desired, and serve immediately.
