  1. Season the cod fillet with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  2. Heat 1 tablespoon olive oil in a non-stick skillet over medium-high heat. Add the cod fillet and sear for 4-5 minutes per side, or until flaky and cooked through. Remove cod from skillet and set aside.
  3. In the same skillet, reduce heat to medium-low. Add 2 tablespoons unsalted butter, 1 clove minced garlic, and 1 teaspoon Creole seasoning. Cook for 1-2 minutes until fragrant, stirring occasionally. Stir in 1 tablespoon fresh parsley.
  4. Return the cod to the skillet, spooning the Creole butter sauce over it to coat. Simmer for 1 minute.
  5. While the cod cooks, prepare the couscous: In a small bowl, combine 1/2 cup quick-cook couscous with 1/2 cup boiling water. Cover and let stand for 5 minutes, then fluff with a fork.
  6. Steam 1 cup frozen broccoli florets in the microwave or on the stovetop according to package directions, until tender-crisp.
  7. Serve the Creole butter cod with couscous and steamed broccoli.

Notes

For extra heat, add a pinch of cayenne pepper to the Creole butter sauce.
