Instructions
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Reserve about 1 cup of the pasta cooking water before draining the pasta.
- While the pasta cooks, heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
- Add the diced yellow onion to the skillet with the beef and cook until softened, about 3 minutes. Stir in the minced garlic and chopped sun-dried tomatoes, cooking for another 1 minute until fragrant.
- Pour in the beef broth and stir in the dried Italian seasoning, salt, and black pepper. Bring to a gentle simmer and cook for 2-3 minutes to allow the flavors to meld.
- Reduce heat to low. Stir in the heavy cream, cottage cheese, and 1/2 cup of grated Parmesan cheese. Cook gently until the cheeses are melted and the sauce is creamy, about 2-3 minutes. Do not boil.
- Add the fresh spinach to the skillet and cook, stirring occasionally, until the spinach is just wilted, about 2-3 minutes. If the sauce is too thick, add a splash of the reserved pasta cooking water until it reaches your desired consistency.
- Add the drained pasta to the skillet with the creamy beef sauce. Toss to combine, ensuring all the pasta is coated.
- Serve hot, garnished with additional grated Parmesan cheese and fresh parsley, if desired.
