Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 4 cup chicken broth
- 1 cup milk (any kind)
- 12 ounce wide egg noodles
- 1 cup peas (frozen)
- 0.5 cup Parmesan cheese (grated)
- 0.5 teaspoon dried thyme (dried)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium heat. Add 1 pound ground turkey and 1 medium diced yellow onion. Cook, breaking up the turkey, until browned and onion is softened, about 5-7 minutes. Drain any excess fat.
- Stir in 2 minced cloves garlic, 1/2 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
- Pour in 4 cups chicken broth and 1 cup milk. Bring to a gentle simmer. Add 12 ounces wide egg noodles and stir well. Reduce heat to medium-low, cover, and cook for 10-12 minutes, stirring occasionally, until noodles are tender and most liquid is absorbed.
- Remove from heat. Stir in 1 cup frozen peas and 1/2 cup grated Parmesan cheese until peas are heated through and cheese is melted.
- Serve immediately.
Notes
Add a splash more broth or milk if the pasta seems too dry after cooking. Leftovers store well and can be easily reheated.
