Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned, about 5 minutes.
  2. Add the diced yellow onion and minced jalapeño to the skillet and cook until softened, about 4-5 minutes.
  3. Stir in the minced garlic, chili powder, ground cumin, smoked paprika, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
  4. Stir in the rinsed black beans, undrained diced tomatoes with green chilies, and vegetable broth. Bring to a simmer. Meanwhile, prepare the microwaveable white rice according to package directions.
  5. Add the trimmed green beans to the skillet, stirring them into the sauce. Continue to simmer for 5-7 minutes, until the green beans are crisp-tender and the sauce has thickened slightly. Stir in the light cream.
  6. Once the rice is cooked, squeeze the juice from half a lime over it and stir in half of the chopped fresh cilantro.
  7. Serve the creamy turkey and black bean skillet over the cilantro lime rice. Garnish with the remaining fresh cilantro and a lime wedge.

Notes

Leftovers store well in an airtight container for up to 3 days. For a spicier kick, leave some seeds in the jalapeño or add a pinch of cayenne pepper.
