- 0.25 pound ground turkey (lean)
- 1 yellow onion (diced)
- 1 jalapeño (minced, seeds removed)
- 2 clove garlic (minced)
- 1 teaspoon chili powder

- 0.5 teaspoon smoked paprika
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 1 can black beans (15 ounce, rinsed and drained)
- 1 can diced tomatoes with green chilies (10 ounce, undrained)
- 0.5 cup vegetable broth
- 0.25 cup light cream
- 6 ounce green beans (trimmed)
- 2 pound white rice (microwaveable)
- 1 lime (halved)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned, about 5 minutes.
- Add the diced yellow onion and minced jalapeño to the skillet and cook until softened, about 4-5 minutes.
- Stir in the minced garlic, chili powder, ground cumin, smoked paprika, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
- Stir in the rinsed black beans, undrained diced tomatoes with green chilies, and vegetable broth. Bring to a simmer. Meanwhile, prepare the microwaveable white rice according to package directions.
- Add the trimmed green beans to the skillet, stirring them into the sauce. Continue to simmer for 5-7 minutes, until the green beans are crisp-tender and the sauce has thickened slightly. Stir in the light cream.
- Once the rice is cooked, squeeze the juice from half a lime over it and stir in half of the chopped fresh cilantro.
- Serve the creamy turkey and black bean skillet over the cilantro lime rice. Garnish with the remaining fresh cilantro and a lime wedge.
Notes
Leftovers store well in an airtight container for up to 3 days. For a spicier kick, leave some seeds in the jalapeño or add a pinch of cayenne pepper.
