Ingredients
- 1 pound pasta
- 1 tablespoon olive oil
- 0.5 yellow onion (finely diced)
- 3 clove garlic (minced)
- 28 ounce crushed tomatoes
- 0.5 cup chicken broth
- 0.5 cup heavy cream
- 0.5 teaspoon dried basil
- 0.25 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 5 ounce fresh spinach
- 0.5 cup grated Parmesan cheese
- 8 ounce garlic bread
Instructions
- Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining. Drain the pasta and set aside.
- While pasta cooks, heat olive oil in a large skillet or Dutch oven over medium heat. Add finely diced yellow onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Stir in crushed tomatoes, chicken broth, dried basil, dried oregano, salt, and black pepper. Bring to a simmer and cook for 5 minutes.
- Reduce heat to low and stir in heavy cream and 1/2 cup grated Parmesan cheese until well combined. Stir in fresh spinach and cook until just wilted, about 1-2 minutes.
- Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, add a splash of the reserved pasta water.
- Prepare garlic bread according to package instructions.
- Serve immediately, garnished with additional grated Parmesan cheese, if desired, and garlic bread on the side.
Notes
Add cooked, shredded chicken or shrimp to make this dish even heartier.
