Creamy Tomato Chicken Pasta

  1. Bring a large pot of salted water to a boil for the pasta.
  2. Season the cubed chicken breast with 1/2 teaspoon salt and 1/8 teaspoon black pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Pour in the tomato sauce, heavy cream, dried oregano, and the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper. Stir to combine. Bring to a gentle simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly. Return chicken to the sauce.
  6. While the sauce simmers, add rotini pasta to the boiling water and cook according to package directions until al dente. Drain well.
  7. In a separate bowl, toss the bagged mixed greens with vinaigrette dressing.
  8. Combine the cooked pasta with the creamy tomato chicken sauce. Serve immediately with the side salad, topped with grated Parmesan cheese if desired.

Notes

You can add a pinch of red pepper flakes to the sauce for a little heat. Any short pasta shape will work well in this dish.
