Ingredients
- 1 pound chicken breast (boneless, skinless, cubed)
- 1 tablespoon olive oil
- 2 clove garlic (minced)
- 1 can tomato sauce
- 0.5 cup heavy cream
- 1 teaspoon dried oregano
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
- 8 ounce rotini pasta
- 4 cup mixed greens
- 0.25 cup vinaigrette dressing
- 0.25 cup grated Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil for the pasta.
- Season the cubed chicken breast with 1/2 teaspoon salt and 1/8 teaspoon black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Pour in the tomato sauce, heavy cream, dried oregano, and the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper. Stir to combine. Bring to a gentle simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly. Return chicken to the sauce.
- While the sauce simmers, add rotini pasta to the boiling water and cook according to package directions until al dente. Drain well.
- In a separate bowl, toss the bagged mixed greens with vinaigrette dressing.
- Combine the cooked pasta with the creamy tomato chicken sauce. Serve immediately with the side salad, topped with grated Parmesan cheese if desired.
Notes
You can add a pinch of red pepper flakes to the sauce for a little heat. Any short pasta shape will work well in this dish.
