- 6 ounce spaghetti
- 1 tablespoon olive oil
- 10 ounce chicken breast (boneless, skinless, cut into 1/2-inch pieces)
- 2 garlic cloves (minced)
- 0.5 yellow onion (medium, chopped)
- 0.5 teaspoon dried oregano
- 0.25 teaspoon red pepper flakes
- 8 ounce tomato sauce
- 0.5 cup chicken broth
- 0.25 cup heavy cream
- 2 cup fresh spinach
- 0.25 teaspoon kosher salt
- 0.125 teaspoon black pepper
- 0.25 cup Parmesan cheese (shredded)
Instructions
- Cook pasta according to package directions until al dente. Drain, reserving 1/4 cup pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken breast pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add yellow onion to the skillet and cook until softened, about 3 minutes. Stir in garlic clove, dried oregano, and red pepper flakes (if using) and cook for 1 minute until fragrant.
- Stir in tomato sauce, chicken broth, heavy cream, kosher salt, and black pepper. Bring to a gentle simmer. Add fresh spinach and cook until wilted, about 1-2 minutes.
- Return cooked chicken breast to the sauce along with the drained pasta. Toss to coat, adding a splash of reserved pasta water if needed to reach desired consistency.
- Serve hot, topped with shredded Parmesan cheese if desired.
Notes
For a little heat, don't skip the red pepper flakes! You can also use pre-cooked rotisserie chicken to make this meal even faster.
