  1. Cook pasta according to package directions until al dente. Drain, reserving 1/4 cup pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken breast pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Add yellow onion to the skillet and cook until softened, about 3 minutes. Stir in garlic clove, dried oregano, and red pepper flakes (if using) and cook for 1 minute until fragrant.
  4. Stir in tomato sauce, chicken broth, heavy cream, kosher salt, and black pepper. Bring to a gentle simmer. Add fresh spinach and cook until wilted, about 1-2 minutes.
  5. Return cooked chicken breast to the sauce along with the drained pasta. Toss to coat, adding a splash of reserved pasta water if needed to reach desired consistency.
  6. Serve hot, topped with shredded Parmesan cheese if desired.

Notes

For a little heat, don't skip the red pepper flakes! You can also use pre-cooked rotisserie chicken to make this meal even faster.
