- 1 pound Italian sausage (casings removed)
- 1 tablespoon olive oil
- 1 yellow onion (chopped)
- 3 clove garlic (minced)
- 1 can white beans (rinsed and drained)
- 1 cup corn (frozen)
- 1 can diced tomatoes (undrained)
- 2 cup chicken broth
- 0.5 cup heavy cream
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Heat a large pot or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove sausage with a slotted spoon and set aside, draining any excess fat if desired.
- Add olive oil to the pot, then add chopped yellow onion and minced garlic. Sauté for 3-5 minutes, until onion is softened.
- Stir in the rinsed white beans, frozen corn, fire roasted diced tomatoes, and chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 8-10 minutes to allow flavors to meld.
- Stir in the cooked Italian sausage and heavy cream. Heat through for 1-2 minutes. Season with salt and black pepper to taste. Serve hot.
