  1. Heat a large pot or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove sausage with a slotted spoon and set aside, draining any excess fat if desired.
  2. Add olive oil to the pot, then add chopped yellow onion and minced garlic. Sauté for 3-5 minutes, until onion is softened.
  3. Stir in the rinsed white beans, frozen corn, fire roasted diced tomatoes, and chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 8-10 minutes to allow flavors to meld.
  4. Stir in the cooked Italian sausage and heavy cream. Heat through for 1-2 minutes. Season with salt and black pepper to taste. Serve hot.
