Ingredients

Instructions

  1. Season 3 boneless pork chops with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Slice 8 ounces mushrooms, dice 1/4 of a yellow onion, and mince 2 cloves garlic.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear the pork chops for 4-5 minutes per side, until golden brown and cooked through (internal temperature 145°F). Remove from skillet and set aside.
  3. In the same skillet, add the sliced mushrooms, diced yellow onion, and minced garlic. Cook for 5-7 minutes until the mushrooms are browned and tender.
  4. Stir in 3/4 cup heavy cream, 1/2 cup chicken broth, and 1/2 teaspoon dried thyme. Bring to a gentle simmer and cook for 3-5 minutes, or until the sauce thickens slightly. Season with the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper.
  5. Return the pork chops to the skillet, coating them in the creamy mushroom sauce. In a separate small skillet, quickly sauté 5 ounces fresh spinach with a pinch of salt until wilted (about 2 minutes).
  6. Serve the pork chops with the creamy mushroom sauce and a side of sautéed spinach.

Notes

Ensure your pork chops are about 1-inch thick for optimal searing time and tenderness.
