Ingredients
- 1 tablespoon olive oil
- 1.5 pound chicken breast (boneless, skinless, cut into 1-inch cubes)
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 4 clove garlic (minced)
- 12 ounce fettuccine (dry)
- 4 cup chicken broth
- 1 cup milk
- 0.5 cup heavy cream
- 0.5 cup Parmesan cheese (grated)
- 0.25 cup fresh parsley (chopped)
- 1 package Caesar salad kit
Instructions
- Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add 1 1/2 pounds cubed chicken breast, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook, stirring occasionally, until chicken is browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add 4 cloves minced garlic to the pot and cook for 1 minute until fragrant.
- Return chicken to the pot. Add 12 ounces dry fettuccine, 4 cups chicken broth, and 1 cup milk. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 8-10 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.
- Stir in 1/2 cup heavy cream and 1/2 cup grated Parmesan cheese. Cook for 2-3 minutes, stirring, until the sauce is creamy and heated through.
- Serve immediately, garnished with 1/4 cup chopped fresh parsley if desired. Serve alongside 1 (10 ounce) bag pre-washed Caesar salad kit.
Notes
Ensure pasta is fully submerged in liquid during simmering to cook evenly. Adjust seasoning to taste.
