  1. Cut chicken breast into 1-inch pieces. Season with 1 tablespoon Italian seasoning, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add diced yellow onion and cook until softened, about 3-5 minutes. Add minced garlic and cherry tomatoes, cook for another 3 minutes until tomatoes start to burst.
  4. Stir in chicken broth, softened light cream cheese, and penne pasta. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
  5. Return cooked chicken to the skillet. Stir in fresh spinach and cook until wilted, about 2-3 minutes. If desired, stir in 1/4 cup grated Parmesan cheese.
  6. While pasta cooks, preheat oven broiler. Mix melted butter with 1/2 teaspoon garlic powder. Brush onto whole wheat bread slices. Broil for 1-2 minutes until lightly toasted.
  7. Serve creamy garlic chicken pasta with garlic-toasted whole wheat bread.
