  2. For the mince curry: Heat coconut oil in a large skillet or pot over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5 minutes. Drain any excess fat.
  3. Add the diced yellow onion and minced garlic to the skillet. Cook for 3-4 minutes, until onion softens. Stir in the mild curry powder and garam masala. Cook for 1 minute until fragrant.
  4. Pour in the beef broth and light coconut milk. Bring to a gentle simmer, then reduce heat to low, cover, and cook for 5 minutes, allowing flavors to meld and sauce to thicken slightly. Season the mince with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
  5. While the curry simmers, prepare the rice: In a small saucepan, combine the white rice, 2 cups water, and 1/4 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until water is absorbed. Fluff with a fork.
  6. Serve the creamy Durban mince curry over the fluffy white rice, topped with the quick pickled red onions. Garnish with chopped fresh cilantro if desired.

Notes

Adjust the curry powder to your taste. For a spicier kick, add a pinch of chili powder or cayenne pepper with the curry powder. Store leftovers in an airtight container for up to 3 days.
