Instructions
- Heat 1 tablespoon coconut oil in a large pot or Dutch oven over medium heat. Add the finely diced yellow onion and cook for 3-4 minutes until softened.
- Stir in the minced garlic, grated fresh ginger, and ground turmeric. Cook for 1 minute until fragrant.
- Pour in the chicken broth and full-fat coconut milk. Bring the mixture to a gentle simmer. Stir in the fish sauce and 1/2 teaspoon salt.
- Add the rinsed and drained konjac noodles to the simmering broth. Cook for 3-5 minutes to heat them through.
- Slowly pour the lightly beaten eggs into the simmering soup in a thin stream, stirring gently in one direction with a fork or chopsticks. The eggs will cook into delicate ribbons.
- Remove the soup from the heat. Ladle into bowls and garnish with chopped fresh cilantro and a lime wedge, if desired.
Notes
Konjac noodles have a unique texture; rinse them thoroughly to reduce any aroma from the packaging. For extra protein, you could add cooked shredded chicken.
