  2. Stir in the minced garlic, grated fresh ginger, and ground turmeric. Cook for 1 minute until fragrant.
  3. Pour in the chicken broth and full-fat coconut milk. Bring the mixture to a gentle simmer. Stir in the fish sauce and 1/2 teaspoon salt.
  4. Add the rinsed and drained konjac noodles to the simmering broth. Cook for 3-5 minutes to heat them through.
  5. Slowly pour the lightly beaten eggs into the simmering soup in a thin stream, stirring gently in one direction with a fork or chopsticks. The eggs will cook into delicate ribbons.
  6. Remove the soup from the heat. Ladle into bowls and garnish with chopped fresh cilantro and a lime wedge, if desired.
