Creamy Chicken Florentine Skillet

Ingredients
- 1.5 pound chicken thighs (boneless, skinless, cut into 1-inch pieces)
- 1 teaspoon salt (kosher)
- 0.5 teaspoon black pepper (freshly ground)
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 14.5 ounce diced tomatoes (undrained)
- 0.5 cup sun-dried tomatoes (chopped (packed in oil, drained))
- 2 cup chicken broth (low sodium)
- 0.75 cup heavy cream
- 1 tablespoon dried Italian seasoning
- 1 cup small pasta (uncooked)
- 5 ounce fresh spinach
- 0.25 cup grated Parmesan cheese (plus more for serving)
Instructions
- Season the 1 1/2 pounds of chicken thighs with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs and cook for 5-7 minutes until browned on all sides. Remove chicken from skillet and set aside.
- Add the chopped yellow onion to the skillet and cook until softened, about 3 minutes. Stir in the minced garlic and cook for 1 minute more.
- Stir in the can of diced tomatoes, sun-dried tomatoes, 2 cups of chicken broth, heavy cream, and dried Italian seasoning. Bring the mixture to a simmer.
- Add the uncooked small pasta and the browned chicken thighs back to the skillet. Stir well. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until the pasta is al dente and chicken is cooked through.
- Stir in the fresh spinach and 1/4 cup of grated Parmesan cheese. Cook, stirring, until spinach is wilted, about 2-3 minutes.
- Serve hot, with extra Parmesan cheese if desired.
Notes
You can use penne or farfalle pasta if small pasta is unavailable, just adjust cooking time as needed.
