Creamy Chicken Florentine Skillet

  1. Season the 1 1/2 pounds of chicken thighs with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
  2. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs and cook for 5-7 minutes until browned on all sides. Remove chicken from skillet and set aside.
  3. Add the chopped yellow onion to the skillet and cook until softened, about 3 minutes. Stir in the minced garlic and cook for 1 minute more.
  4. Stir in the can of diced tomatoes, sun-dried tomatoes, 2 cups of chicken broth, heavy cream, and dried Italian seasoning. Bring the mixture to a simmer.
  5. Add the uncooked small pasta and the browned chicken thighs back to the skillet. Stir well. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until the pasta is al dente and chicken is cooked through.
  6. Stir in the fresh spinach and 1/4 cup of grated Parmesan cheese. Cook, stirring, until spinach is wilted, about 2-3 minutes.
  7. Serve hot, with extra Parmesan cheese if desired.

Notes

You can use penne or farfalle pasta if small pasta is unavailable, just adjust cooking time as needed.
