  1. In a medium bowl, toss the diced chicken breast with ground cumin, dried oregano, and black pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until cooked through and lightly browned.
  3. While chicken cooks, prepare the vegetables: wash and separate lettuce leaves. In a small bowl, combine the finely diced red bell pepper, finely diced cucumber, and thinly sliced green onion.
  4. In another small bowl, whisk together the fresh lime juice and fresh cilantro for the drizzle.
  5. To assemble, spoon the cooked chicken into the lettuce leaves. Top with the mixed fresh vegetables and drizzle with the lime-cilantro sauce.
  6. Serve immediately and enjoy as a handheld meal.

Notes
