Instructions
- In a medium bowl, toss the diced chicken breast with ground cumin, dried oregano, and black pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until cooked through and lightly browned.
- While chicken cooks, prepare the vegetables: wash and separate lettuce leaves. In a small bowl, combine the finely diced red bell pepper, finely diced cucumber, and thinly sliced green onion.
- In another small bowl, whisk together the fresh lime juice and fresh cilantro for the drizzle.
- To assemble, spoon the cooked chicken into the lettuce leaves. Top with the mixed fresh vegetables and drizzle with the lime-cilantro sauce.
- Serve immediately and enjoy as a handheld meal.
Notes
Ensure lettuce leaves are dry for best crispness. For extra heat, add a pinch of cayenne pepper to the chicken seasoning.
