Cowboy Turkey Chili

  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned, about 6-8 minutes. Drain any excess fat.
  2. Add the diced yellow onion, diced green bell pepper, and minced garlic cloves to the pot. Sauté for 5-7 minutes until the vegetables soften.
  3. Stir in the chili powder, ground cumin, and smoked paprika, cooking for 1 minute until fragrant.
  4. Add the undrained diced tomatoes, rinsed and drained kidney beans, rinsed and drained black beans, frozen corn kernels, and vegetable broth. Stir well.
  5. Bring the chili to a boil, then reduce heat to low, cover, and simmer for at least 25 minutes, or up to 2 hours for flavors to deepen, stirring occasionally. Season with 1 teaspoon salt and 1/2 teaspoon black pepper.
  6. Serve hot, with whole wheat tortillas or cornbread on the side, if desired. Enjoy!

Notes

For a slow cooker version, brown the turkey and sauté the vegetables as instructed, then transfer everything to the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
