Ingredients
- 1 tablespoon olive oil
- 0.5 pound ground beef (80/20 lean)
- 0.5 yellow onion (chopped)
- 1 green bell pepper (chopped)
- 2 clove garlic (minced)
- 1 can baked beans
- 1 can kidney beans (drained and rinsed)
- 1 can black beans (drained and rinsed)
- 0.5 cup BBQ sauce
- 2 tablespoon brown sugar
- 1 teaspoon liquid smoke
- 4 baking potatoes (large)
- 1 package coleslaw mix
- 0.5 cup coleslaw dressing
Instructions
- Pre-cook baking potatoes using your preferred method (microwave for 5-8 minutes or bake at 400°F for 45-60 minutes). Keep warm until serving.
- While potatoes cook, heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain any excess fat.
- Add yellow onion, green bell pepper, and garlic to the pot. Cook for 5-7 minutes until vegetables are softened.
- Stir in baked beans, kidney beans, black beans, BBQ sauce, brown sugar, and liquid smoke. Bring the mixture to a simmer, then reduce heat and let it cook gently for 5-10 minutes to allow flavors to meld.
- In a separate bowl, toss the coleslaw mix with coleslaw dressing.
- Serve the cowboy beans hot with the warm baking potatoes and coleslaw on the side.
Notes
For quicker potato preparation, you can microwave them, or use instant mashed potatoes instead.
