Ingredients
- 1 pound chicken breast (boneless, skinless, cut into bite-sized pieces)
- 1 can coconut milk
- 1 cup jasmine rice (uncooked)
- 8 ounce sugar snap peas (trimmed)
- 1 tablespoon olive oil
- 2 clove garlic (minced)
- 1 tablespoon fresh ginger (freshly grated)
- 1 tablespoon gluten-free tamari
- 1 lime (juiced)
- 0.75 teaspoon salt
- 2 tablespoon fresh cilantro (chopped)
Instructions
- In a medium saucepan, combine jasmine rice, 2 cups of water, and 1/4 teaspoon of the salt. Bring to a boil over high heat, cover with a lid, reduce heat to low, and simmer for 15 minutes until liquid is absorbed. Remove from heat and keep covered.
- While rice cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, cooking for 1 minute until fragrant.
- Pour in coconut milk, gluten-free tamari, lime juice, and remaining 1/2 teaspoon salt, stirring well to combine and bringing to a gentle simmer.
- Add chicken breast pieces and sugar snap peas to the skillet. Simmer gently over medium-low heat for 8 to 10 minutes, stirring occasionally, until chicken reaches an internal temperature of 165°F and snap peas are tender-crisp.
- Fluff jasmine rice with a fork and divide between two shallow bowls. Ladle the chicken, snap peas, and coconut broth over the rice, garnishing with fresh cilantro if desired.
Notes
