  1. In a medium saucepan, combine jasmine rice, 2 cups of water, and 1/4 teaspoon of the salt. Bring to a boil over high heat, cover with a lid, reduce heat to low, and simmer for 15 minutes until liquid is absorbed. Remove from heat and keep covered.
  2. While rice cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, cooking for 1 minute until fragrant.
  3. Pour in coconut milk, gluten-free tamari, lime juice, and remaining 1/2 teaspoon salt, stirring well to combine and bringing to a gentle simmer.
  4. Add chicken breast pieces and sugar snap peas to the skillet. Simmer gently over medium-low heat for 8 to 10 minutes, stirring occasionally, until chicken reaches an internal temperature of 165°F and snap peas are tender-crisp.
  5. Fluff jasmine rice with a fork and divide between two shallow bowls. Ladle the chicken, snap peas, and coconut broth over the rice, garnishing with fresh cilantro if desired.
