Instructions

- Brown the turkey: While rice cooks, heat 1 tablespoon coconut oil in a large skillet or wok over medium-high heat. Add 1 pound lean ground turkey and 1 chopped yellow onion. Cook, breaking up the turkey, until browned and onion is softened, about 5-7 minutes. Drain any excess fat.

- Simmer sauce: Pour in 1 can light coconut milk, 2 tablespoons soy sauce, and 1 tablespoon brown sugar. If desired, add 1/2 teaspoon red pepper flakes for heat. Bring to a gentle simmer.
- Add green beans: Add 1 pound fresh green beans to the skillet. Cook, stirring occasionally, for 5-7 minutes, until green beans are tender-crisp and the sauce has slightly thickened.
- Serve: Serve the coconut ground turkey and green beans immediately over the prepared jasmine rice.
