Instructions
- Cook instant white rice according to package directions. Keep warm.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground pork and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
- Add yellow onion to the pot and sauté for 2-3 minutes until softened. Stir in minced garlic, minced fresh ginger, ground turmeric, ground cumin, and cayenne pepper, cooking for 1 minute until fragrant.
- Stir in diced tomatoes (undrained), full-fat coconut milk, and chicken broth. Bring the mixture to a gentle simmer, then reduce heat to low, cover, and cook for 5-7 minutes to allow flavors to meld.
- Season the stew with salt and black pepper to taste. Ladle the stew over the warm white rice and serve with slices of crusty bread. Garnish with chopped fresh cilantro, if desired.
Notes
A quick squeeze of lime juice at the end can brighten the flavors further. If you prefer a thicker stew, let it simmer uncovered for a few extra minutes.
