Ingredients
- 1 pound shrimp (peeled, deveined, tails removed)
- 1.5 cup white basmati rice (uncooked)
- 3 cup water
- 1 can canned coconut milk (13.5 oz can, unsweetened)
- 1 tablespoon avocado oil
- 1 tablespoon fresh ginger (finely grated)
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 8 ounce green beans (trimmed)
- 2 tablespoon lime juice (freshly squeezed)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Combine white basmati rice, 3 cups water, and 1/2 teaspoon salt in a medium pot. Bring to a boil over medium-high heat, reduce heat to low, cover, and cook for 15 minutes until tender and water is fully absorbed.
- Heat avocado oil in a deep skillet over medium heat. Add grated fresh ginger, ground turmeric, ground coriander, and ground cumin, stirring constantly for 1 minute until fragrant.
- Pour in canned coconut milk and remaining 1/2 teaspoon salt. Bring to a gentle simmer. Add trimmed green beans, cover, and simmer for 5 minutes until crisp-tender.
- Add peeled shrimp to the simmering coconut sauce. Cook for 3 to 4 minutes, stirring gently, until shrimp are pink, opaque, and cooked through to 145 degrees F.
- Stir in fresh lime juice. Ladle the shrimp, green beans, and warm coconut curry sauce over bowls of basmati rice, garnishing with fresh cilantro.
