Ingredients
- 2.5 pound chicken thighs (boneless, skinless, cut into 1-inch pieces)
- 2 tablespoon coconut oil
- 1 yellow onion (large, diced)
- 4 clove garlic (minced)
- 1 tablespoon ginger (freshly grated)
- 2 tablespoon curry powder
- 1 teaspoon garam masala
- 1 teaspoon ground turmeric
- 1.25 teaspoon salt
- 2 sweet potatoes (medium, peeled and cubed)
- 1 can canned coconut milk (13.5 oz can)
- 1 can diced tomatoes (14.5 oz can, with juices)
- 4 cup baby spinach (fresh)
- 1.5 cup basmati rice (uncooked)
Instructions
- Combine white basmati rice and 3 cups of water with 1/4 teaspoon of the salt in a medium pot. Bring to a boil, then cover, reduce heat to low, and cook for 15 minutes until liquid is absorbed and rice is fluffy.
- Heat coconut oil in a large Dutch oven over medium heat. Add the yellow onion and sauté for 4 minutes until translucent.
- Add minced garlic, grated ginger, curry powder, garam masala, ground turmeric, and the remaining 1 teaspoon salt. Stir constantly for 1 minute until fragrant.
- Add chicken thighs, sweet potato cubes, canned coconut milk, and diced tomatoes with their juices. Stir well, bring to a simmer, cover, and cook for 20 minutes until chicken registers 165°F and sweet potatoes are tender.
- Stir in fresh baby spinach and cook for 2 minutes until wilted. Serve the curry over the cooked basmati rice.
Notes
Curry flavors deepen and improve after an overnight rest in the refrigerator.
