Ingredients
- 1 pound large raw shrimp (peeled and deveined)
- 1 can coconut milk (canned, full fat)
- 1 cup jasmine rice (uncooked)
- 1 yellow bell pepper (medium, sliced thin)
- 1 Roma tomato (medium, diced)
- 1 yellow onion (medium, sliced thin)
- 2 clove garlic (minced)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika (sweet)
- 1 teaspoon salt
- 1 lime (medium, juiced)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Combine the uncooked jasmine rice with 2 cups of water and 1/4 teaspoon of the salt in a medium saucepan. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes until tender.
- Meanwhile, heat the olive oil in a large deep skillet over medium heat. Add the sliced yellow onion, yellow bell pepper, and garlic, sautéing for 4 minutes until softened.
- Add the diced Roma tomato, ground cumin, paprika, and 1/2 teaspoon of the salt, cooking for 1 minute until fragrant.
- Pour in the entire can of unsweetened coconut milk and bring the mixture to a gentle simmer for 3 minutes.
- Add the large raw shrimp and simmer gently for 4 to 5 minutes until the shrimp turn pink and opaque throughout (internal temperature 145°F). Remove from heat, stir in fresh lime juice, chopped fresh cilantro, and the remaining 1/4 teaspoon of salt, and ladle generously over the cooked jasmine rice.
Notes
Full-fat canned coconut milk creates the traditional silky body and pairs wonderfully with citrus.
