Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1 yellow onion (medium, chopped)
- 1 cup frozen mixed vegetables
- 1 cup beef broth
- 1 tablespoon all-purpose flour
- 1 teaspoon Worcestershire sauce
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 cup instant mashed potato flakes
- 2 tablespoon butter
- 0.5 cup milk
Instructions
- Heat vegetable oil in a large skillet or pot over medium-high heat. Add ground beef and yellow onion, breaking up the beef. Cook until beef is browned and onion is softened, about 5-7 minutes. Drain any excess fat.
- Stir in all-purpose flour and cook for 1 minute. Add beef broth, Worcestershire sauce, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, stirring until sauce thickens.
- Stir in frozen mixed vegetables and cook for 3-5 minutes, until heated through. Keep warm.
- While the beef mixture cooks, prepare instant mashed potatoes according to package directions, adding butter and milk. Ensure they are creamy and smooth.
- Divide the beef mixture among four bowls. Top each with a generous dollop of mashed potatoes. Serve immediately.
Notes
You can add a sprinkle of fresh chopped parsley on top of the mashed potatoes for extra color, if desired.
