  1. Heat vegetable oil in a large skillet or pot over medium-high heat. Add ground beef and yellow onion, breaking up the beef. Cook until beef is browned and onion is softened, about 5-7 minutes. Drain any excess fat.
  2. Stir in all-purpose flour and cook for 1 minute. Add beef broth, Worcestershire sauce, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, stirring until sauce thickens.
  3. Stir in frozen mixed vegetables and cook for 3-5 minutes, until heated through. Keep warm.
  4. While the beef mixture cooks, prepare instant mashed potatoes according to package directions, adding butter and milk. Ensure they are creamy and smooth.
  5. Divide the beef mixture among four bowls. Top each with a generous dollop of mashed potatoes. Serve immediately.

Notes

You can add a sprinkle of fresh chopped parsley on top of the mashed potatoes for extra color, if desired.
