Instructions
- Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
- Add the chopped yellow onion and minced garlic to the pot and sauté for 3-5 minutes, until softened and fragrant.
- Stir in the crushed tomatoes, tomato sauce, vegetable broth, dried Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat to low, cover, and let simmer for at least 15 minutes to allow the flavors to meld. Stir occasionally.
- While the sauce simmers, cook the gluten-free pasta according to package directions in a separate pot of salted water until al dente. Drain well.
- For the side salad, whisk together 2 tablespoons olive oil, red wine vinegar, a pinch of salt, and a pinch of black pepper in a small bowl. Toss the mixed greens with the dressing just before serving.
- Serve the turkey meat sauce over the drained gluten-free pasta, garnished with fresh parsley if desired. Enjoy with the side salad.
