Instructions
- In a small bowl, whisk 2 large eggs with 1 tablespoon milk or water, a pinch of salt, and a pinch of black pepper until well combined and slightly foamy.
- Heat 1/2 tablespoon butter or olive oil in an 8-inch non-stick skillet over medium-low heat until shimmering. Pour in the egg mixture.
- As the edges set, gently push cooked egg towards the center with a spatula, tilting the pan to allow uncooked egg to flow underneath. Continue until the top is mostly set but still moist, about 2-3 minutes.
- Sprinkle 1 ounce diced cooked ham and 1/4 cup shredded cheddar cheese over one half of the omelet. Cook for another 1-2 minutes until cheese is melted.
- Fold the plain half of the omelet over the filled half. Carefully slide onto a plate.
- In a separate bowl, toss 1 cup mixed greens with 1 tablespoon vinaigrette dressing. Serve the omelet immediately with the simple green salad.
