Ingredients
- 12 ounce linguine
- 2 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 pound shrimp (peeled and deveined)
- 4 clove garlic (minced)
- 0.5 teaspoon red pepper flakes
- 0.5 cup chicken broth
- 1 lemon (juice of)
- 0.25 cup fresh parsley (chopped)
- 1 package Caesar salad kit (5-ounce bag)
Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta.
- While the pasta cooks, heat 1 tablespoon of olive oil and the unsalted butter in a large skillet over medium-high heat. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil if needed. Add the minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant. Do not brown the garlic.
- Deglaze the skillet with chicken broth and lemon juice, scraping up any browned bits from the bottom. Bring to a gentle simmer. Add the cooked linguine to the skillet, along with the cooked shrimp and fresh parsley. Toss to combine, adding a splash of the reserved pasta water if the sauce is too thick.
- Prepare the Caesar salad kit according to package directions. Serve the shrimp linguine immediately with the prepared salad.
Notes
For a richer sauce, add a tablespoon of heavy cream at the end with the pasta and parsley.
