Classic Garlic Shrimp Linguine

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta.
  2. While the pasta cooks, heat 1 tablespoon of olive oil and the unsalted butter in a large skillet over medium-high heat. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of olive oil if needed. Add the minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant. Do not brown the garlic.
  4. Deglaze the skillet with chicken broth and lemon juice, scraping up any browned bits from the bottom. Bring to a gentle simmer. Add the cooked linguine to the skillet, along with the cooked shrimp and fresh parsley. Toss to combine, adding a splash of the reserved pasta water if the sauce is too thick.
  5. Prepare the Caesar salad kit according to package directions. Serve the shrimp linguine immediately with the prepared salad.

Notes

For a richer sauce, add a tablespoon of heavy cream at the end with the pasta and parsley.
