- 1.5 pound cooked boneless, skinless chicken breast (shredded or diced)

Instructions
- If using pre-cooked chicken breast, shred or dice it into bite-sized pieces. If cooking fresh chicken, quickly boil or pan-fry chicken breast until cooked through, then cool and shred/dice.
- In a large bowl, combine the shredded or diced chicken breast, mayonnaise, finely diced celery, finely diced red onion, Dijon mustard, and lemon juice. Mix well until all ingredients are thoroughly combined.
- Season the chicken salad with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Taste and adjust seasonings as needed.
- Separate the Romaine lettuce hearts into individual leaves to use as wraps. Slice the bell pepper and cucumber into sticks or rounds for serving on the side.
- Serve the chicken salad alongside the lettuce leaves, sliced bell pepper, and sliced cucumber, allowing everyone to fill their own lettuce wraps and add the vegetable sides as desired. This ensures all components remain distinct and fresh.
