  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion. Cook, breaking up the beef, until browned, about 8-10 minutes. Drain any excess fat.
  2. Stir in minced garlic, chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook for 1 minute until fragrant.
  3. Pour in the beef broth and bring to a simmer. Reduce heat to low and cook for 5-7 minutes, allowing the sauce to thicken slightly. Remove from heat.
  4. While beef is simmering, prepare the black bean salsa: In a medium bowl, combine black beans, chopped Roma tomato, chopped red onion, chopped fresh cilantro, and lime juice. Stir well to combine.
  5. Warm gluten-free corn tortillas according to package directions. Serve the seasoned ground beef in tortillas, topped with black bean salsa and optional chopped avocado.

Notes

You can prepare the black bean salsa ahead of time and store it in the refrigerator. Adjust spice level by adding a pinch of cayenne pepper to the beef seasoning if you like extra heat.
