  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion, breaking up the beef with a spoon. Cook until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
  2. Stir in the chili powder, ground cumin, smoked paprika, garlic powder, and kosher salt. Cook for 1 minute until fragrant.
  3. Pour in 1/4 cup water and bring to a simmer. Reduce heat to low and cook for 3-5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  4. While the beef simmers, warm the flour tortillas according to package directions (microwave, oven, or pan).
  5. Serve the seasoned beef in warm tortillas, topped with shredded romaine lettuce, shredded cheddar cheese, and optional sour cream and salsa.

Notes

Adjust the chili powder to your preferred spice level. For a complete meal, consider adding a side of black beans or corn.
