Instructions
- Preheat oven to 425°F and line a large baking sheet with parchment paper.
- In a small bowl, whisk together olive oil, fresh lime juice, ground cumin, dried oregano, salt, and black pepper.
- Arrange the chicken thighs and sliced yellow squash in a single layer on the prepared baking sheet. Pour the olive oil and lime mixture evenly over both the chicken and squash, tossing gently to coat.
- Roast for 25 minutes until the chicken thighs are cooked through and reach an internal temperature of 165°F and the squash is soft and golden.
