  1. Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the thinly sliced chicken breast and cook for 3-5 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.
  2. Add the remaining 1 tablespoon of olive oil to the skillet. Add the diced yellow onion and red bell pepper, cooking for 3 minutes until slightly softened.
  3. Stir in the minced garlic, ground cumin, dried oregano, ground turmeric, salt, and black pepper. Cook for 1 minute more, until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Stir in the instant white rice and frozen corn.
  5. Reduce heat to low, cover the skillet, and simmer for 5-7 minutes, or until the rice is tender and most of the liquid is absorbed. If the rice is not fully cooked, add a splash more broth and continue to simmer for a few more minutes.
  6. Stir the cooked chicken back into the skillet. Remove from heat, stir in the fresh lime juice, and let it rest, covered, for 2 minutes.
  7. Serve immediately, garnished with fresh cilantro, if desired.
