Ingredients
- 2.5 pound chicken breast (boneless, skinless, thinly sliced against the grain)
- 2 tablespoon olive oil (divided)
- 1 yellow onion (large, diced)
- 1 red bell pepper (diced)
- 4 clove garlic (minced)
- 1 teaspoon ground cumin
- 0.5 teaspoon dried oregano
- 0.5 teaspoon ground turmeric
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 4 cup chicken broth
- 2 cup instant white rice
- 1 cup frozen corn
- 2 tablespoon fresh lime juice
- 0.25 cup fresh cilantro (chopped, for garnish)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the thinly sliced chicken breast and cook for 3-5 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the skillet. Add the diced yellow onion and red bell pepper, cooking for 3 minutes until slightly softened.
- Stir in the minced garlic, ground cumin, dried oregano, ground turmeric, salt, and black pepper. Cook for 1 minute more, until fragrant.
- Pour in the chicken broth and bring to a simmer. Stir in the instant white rice and frozen corn.
- Reduce heat to low, cover the skillet, and simmer for 5-7 minutes, or until the rice is tender and most of the liquid is absorbed. If the rice is not fully cooked, add a splash more broth and continue to simmer for a few more minutes.
- Stir the cooked chicken back into the skillet. Remove from heat, stir in the fresh lime juice, and let it rest, covered, for 2 minutes.
- Serve immediately, garnished with fresh cilantro, if desired.
