Ingredients
- 2 sweet potatoes (large, peeled and cut into 1/2-inch dice)
- 1 tablespoon avocado oil
- 0.5 cup water
- 1 teaspoon ground cumin
- 0.5 teaspoon ground cinnamon
- 1 teaspoon garlic powder
- 0.5 teaspoon ground coriander
- 0.5 teaspoon salt
- 2 can black beans (rinsed and drained)
- 1 package frozen sweet corn
- 0.25 cup fresh cilantro (chopped)
- 1 cup plain nonfat Greek yogurt (for serving)
Instructions
- Heat avocado oil in a large skillet over medium-high heat. Add diced sweet potatoes and sauté for 3 minutes until lightly browned on the edges.
- Add water, ground cumin, ground cinnamon, garlic powder, ground coriander, and salt to the skillet. Cover with a tight-fitting lid and cook for 6 to 7 minutes over medium heat until the sweet potatoes are fork-tender.
- Uncover the skillet and stir in the drained black beans and frozen sweet corn. Cook uncovered for 4 to 5 minutes, stirring occasionally, until the liquid has evaporated and the beans and corn are heated through.
- Divide the warm skillet mixture among serving bowls. Garnish with chopped fresh cilantro if desired and top each portion with a generous spoonful of plain nonfat Greek yogurt.
Notes
Leftovers reheat very well in the microwave; store extra Greek yogurt separately to add fresh after warming.
