- 1 pound ground pork
- 1 tablespoon avocado oil
- 1 yellow onion (chopped)
- 1 pound fresh green beans (trimmed)
- 0.25 cup apple cider vinegar
- 2 tablespoon brown sugar
- 1 tablespoon Dijon mustard
- 0.5 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 cup rice (cooked)
Instructions
- Heat avocado oil in a large skillet over medium-high heat. Add ground pork and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess grease.
- Add chopped yellow onion and green beans to the skillet. Sauté for 5-7 minutes until onion is softened and green beans are crisp-tender.
- While the pork and vegetables cook, whisk together apple cider vinegar, brown sugar, Dijon mustard, dried thyme, salt, and black pepper in a small bowl.
- Pour the glaze over the pork and vegetables in the skillet. Stir to coat evenly and simmer for 2-3 minutes, until the sauce slightly thickens.
- Serve the cider-glazed pork and green beans immediately with cooked rice on the side.
Notes
Adjust the sweetness and tanginess of the glaze to your preference. Leftovers are delicious reheated.
