Chipotle Chicken Tacos

  1. Place chicken thighs or breasts in the slow cooker. Top with sliced yellow onion and minced garlic.
  2. In a small bowl, combine chipotle peppers in adobo, diced tomatoes (undrained), chicken broth, chili powder, ground cumin, dried oregano, kosher salt, and black pepper. Pour this mixture over the chicken in the slow cooker.
  3. Cover and cook on low for 4-6 hours or on high for 2.5-3.5 hours, until the chicken is easily shredded with two forks.
  4. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce in the slow cooker and stir well to combine.
  5. Stir in the juice of 1 lime.
  6. Serve the chipotle chicken hot with warm corn or flour tortillas, shredded lettuce, diced avocado, and optional fresh cilantro.

Notes

Leftover chicken is excellent for quesadillas or salads. For extra convenience, prepare the toppings ahead of time.
