  1. Combine chicken breast strips with 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Toss to coat.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 3-4 minutes per side, until browned and mostly cooked through. Remove chicken from skillet and set aside.
  3. Add sliced yellow onion and sliced bell pepper to the same skillet. Cook for 5-7 minutes, stirring occasionally, until tender-crisp. While vegetables cook, cook the white rice according to package directions or in a rice cooker.
  4. Return chicken to the skillet. Stir in chicken broth and adobo sauce from canned chipotles. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly and chicken is fully cooked.
  5. Season with remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper, adjusting to taste. Serve hot over cooked white rice, garnished with fresh cilantro if desired.

Notes

For extra heat, add a diced chipotle pepper from the can along with the adobo sauce. This dish reheats well and is great for packed lunches.
