- 1 tablespoon olive oil
- 1.5 pound chicken breast (cut into strips)
- 1 teaspoon chili powder
- 0.5 teaspoon ground cumin
- 0.25 teaspoon garlic powder
- 1 yellow onion (medium, sliced)
- 2 bell peppers (sliced)
- 0.5 cup chicken broth
- 1 tablespoon chipotle adobo sauce
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1.5 cup white rice (uncooked)
- 2 tablespoon fresh cilantro (chopped, for garnish)
Instructions
- Combine chicken breast strips with 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Toss to coat.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 3-4 minutes per side, until browned and mostly cooked through. Remove chicken from skillet and set aside.
- Add sliced yellow onion and sliced bell pepper to the same skillet. Cook for 5-7 minutes, stirring occasionally, until tender-crisp. While vegetables cook, cook the white rice according to package directions or in a rice cooker.
- Return chicken to the skillet. Stir in chicken broth and adobo sauce from canned chipotles. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly and chicken is fully cooked.
- Season with remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper, adjusting to taste. Serve hot over cooked white rice, garnished with fresh cilantro if desired.
Notes
For extra heat, add a diced chipotle pepper from the can along with the adobo sauce. This dish reheats well and is great for packed lunches.
