Ingredients
- 4 ounce ground beef (85% lean)
- 1 teaspoon olive oil
- 0.25 yellow onion (chopped)
- 1 clove garlic (minced)
- 0.5 teaspoon chipotle powder
- 0.25 teaspoon cumin powder
- 2 cup green cabbage (shredded)
- 0.5 avocado (sliced)
Instructions
- Heat 1 teaspoon of olive oil in a medium skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the chopped yellow onion and minced garlic to the skillet with the beef. Cook for 2-3 minutes until softened.
- Stir in the chipotle powder and cumin powder, cooking for 1 minute until fragrant.
- Add the shredded green cabbage to the skillet. Cook, stirring occasionally, for 5-7 minutes, until the cabbage is tender-crisp.
- Serve the chipotle beef and cabbage skillet immediately, topped with sliced avocado.
Notes
Adjust the amount of chipotle powder to your preferred spice level. For an even quicker meal, use pre-shredded cabbage.
