Ingredients

- 4 corn tortillas
- 1 cup green beans
- 1 lime
- 0.25 cup fresh cilantro (chopped)
- 1 avocado (diced)
- 0.5 cup salsa
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5 minutes. Drain any excess fat.
- Stir in the chipotle chili powder, ground cumin, garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper into the beef. Cook for 1 minute until fragrant.
- Add the rinsed black beans to the skillet with the beef and stir to combine. Reduce heat to low and let simmer gently while you prepare the remaining ingredients, about 5 minutes.
- While the beef mixture simmers, heat the remaining 1 tablespoon of olive oil in a separate skillet over medium heat. Cook the corn tortillas for 1-2 minutes per side until lightly golden and crisp. Alternatively, you can crisp them in a toaster oven.
- Steam or microwave the green beans according to package directions, until tender-crisp. Transfer to a small bowl, squeeze the juice of half the lime over them, and season with a pinch of the remaining salt and black pepper.
- To assemble the tostadas, place 2 crispy corn tortillas on each serving plate. Spoon the chipotle beef and black bean mixture evenly over the tortillas. Top with diced avocado, salsa, and chopped fresh cilantro.
- Serve immediately with the lime-kissed green beans on the side, or on top of the tostada for an added veggie boost. Offer additional lime wedges for squeezing.
Notes
Adjust the amount of chipotle chili powder to your preferred spice level. For crispier tortillas, you can bake them at 375°F for 5-7 minutes instead of pan-frying.
