Ingredients
- 6 cod fillets (6 ounces each, thawed if frozen)
- 1 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup low-sodium soy sauce
- 2 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1 tablespoon fresh ginger (grated)
- 2 clove garlic (minced)
- 1 tablespoon sesame oil
- 2 cup jasmine rice (uncooked)
- 1.5 pound broccoli florets
- 1 tablespoon sesame seeds (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper.
- Pat dry 6 (6 ounce each) cod fillets with paper towels. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Arrange them in the prepared baking dish.
- In a small bowl, whisk together 1/2 cup low-sodium soy sauce, 2 tablespoons rice vinegar, 1 tablespoon brown sugar, 1 tablespoon grated fresh ginger, 2 cloves garlic, minced, and 1 tablespoon sesame oil. Pour half of the sauce over the cod fillets.
- Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork, basting once halfway through with the pan sauce. Reserve the remaining sauce.
- While the fish bakes, prepare 2 cups uncooked jasmine rice according to package directions. Also, steam 1 1/2 pounds fresh broccoli florets until tender-crisp, about 5-7 minutes.
- Serve the baked cod over cooked jasmine rice, alongside the steamed broccoli. Drizzle with the remaining reserved soy-ginger sauce and garnish with 1 tablespoon sesame seeds, if desired.
Notes
Store leftovers in separate containers for best freshness, reheats well in the microwave or oven. Adjust ginger and garlic to your taste.
