  1. Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper.
  2. Pat dry 6 (6 ounce each) cod fillets with paper towels. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Arrange them in the prepared baking dish.
  3. In a small bowl, whisk together 1/2 cup low-sodium soy sauce, 2 tablespoons rice vinegar, 1 tablespoon brown sugar, 1 tablespoon grated fresh ginger, 2 cloves garlic, minced, and 1 tablespoon sesame oil. Pour half of the sauce over the cod fillets.
  4. Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork, basting once halfway through with the pan sauce. Reserve the remaining sauce.
  5. While the fish bakes, prepare 2 cups uncooked jasmine rice according to package directions. Also, steam 1 1/2 pounds fresh broccoli florets until tender-crisp, about 5-7 minutes.
  6. Serve the baked cod over cooked jasmine rice, alongside the steamed broccoli. Drizzle with the remaining reserved soy-ginger sauce and garnish with 1 tablespoon sesame seeds, if desired.

Notes

Store leftovers in separate containers for best freshness, reheats well in the microwave or oven. Adjust ginger and garlic to your taste.
