  1. Preheat your oven to 425°F for the potatoes and preheat an outdoor grill to medium-high heat (around 400°F).
  2. Toss the red potatoes on a baking sheet with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Roast for 25 to 30 minutes until golden and tender when pierced with a fork.
  3. In a small bowl, whisk together the fresh parsley, minced garlic, red wine vinegar, dried oregano, 2 tablespoons of olive oil, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper to create the chimichurri sauce.
  4. Brush the chicken breasts and zucchini quarters with the remaining 1 tablespoon of olive oil and season with the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper.
  5. Place chicken breasts on the hot grill grates and cook for 6 to 7 minutes per side until grill marks appear and the internal temperature reaches 165°F.
  6. Grill the zucchini quarters alongside the chicken for 3 to 4 minutes per side until nicely charred and tender-crisp.
  7. Transfer chicken to a cutting board, let rest for 5 minutes, then slice and serve spooned with fresh chimichurri alongside roasted potatoes and grilled zucchini.

Notes

Chimichurri can be prepared up to a day ahead and kept refrigerated to let the flavors meld.
