Ingredients
- 1.5 pound chicken breast (boneless, skinless, cut into 4 cutlets)
- 1 can artichoke hearts (quartered, drained)

Instructions
- Preheat your oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.
- In a small bowl, whisk together 1 cup finely chopped parsley, 1/4 cup finely chopped cilantro, 3 minced garlic cloves, 2 tablespoons red wine vinegar, 1 tablespoon of the olive oil, 1/4 teaspoon of the salt, and 1/4 teaspoon red pepper flakes to make the chimichurri sauce.
- Toss 1 pound trimmed green beans and 1 can drained artichoke hearts on the baking sheet with the remaining 1 tablespoon olive oil and 1/4 teaspoon salt.
- Nestle the 4 chicken breast cutlets among the vegetables on the baking sheet, spooning 1 tablespoon of the chimichurri over each cutlet.
- Roast in the oven for 20 minutes until the green beans are tender-crisp and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Transfer chicken and vegetables to plates and drizzle the remaining chimichurri sauce over the top before serving.
Notes
Leftover chicken and vegetables can be stored together and reheated gently in a toaster oven or skillet.
