Chimichurri Chicken with Roasted Artichokes

  1. Preheat your oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.
  2. In a small bowl, whisk together 1 cup finely chopped parsley, 1/4 cup finely chopped cilantro, 3 minced garlic cloves, 2 tablespoons red wine vinegar, 1 tablespoon of the olive oil, 1/4 teaspoon of the salt, and 1/4 teaspoon red pepper flakes to make the chimichurri sauce.
  3. Toss 1 pound trimmed green beans and 1 can drained artichoke hearts on the baking sheet with the remaining 1 tablespoon olive oil and 1/4 teaspoon salt.
  4. Nestle the 4 chicken breast cutlets among the vegetables on the baking sheet, spooning 1 tablespoon of the chimichurri over each cutlet.
  5. Roast in the oven for 20 minutes until the green beans are tender-crisp and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  6. Transfer chicken and vegetables to plates and drizzle the remaining chimichurri sauce over the top before serving.

Notes

Leftover chicken and vegetables can be stored together and reheated gently in a toaster oven or skillet.
