  1. Bring a medium pot of water to a boil. Add rice vermicelli noodles and cook for 3 minutes until tender. Drain thoroughly and rinse under cold running water until completely chilled; set aside.
  2. In the same pot with fresh boiling water, add peeled shrimp and cook for 2 minutes until opaque and pink, reaching 145 degrees F. Drain immediately and transfer to a bowl of ice water to chill for 2 minutes, then drain thoroughly.
  3. In a small mixing bowl, whisk together fish sauce, lime juice, maple syrup, and garlic-infused olive oil until emulsified to make the dressing.
  4. Arrange the chilled rice vermicelli noodles evenly in three serving bowls. Top with cooked chilled shrimp, julienned English cucumber, shredded carrots, sliced scallion greens, and fresh cilantro.
  5. Drizzle the prepared dressing evenly over each bowl just before serving.

Notes

Using only the dark green tops of scallions ensures full onion flavor while adhering strictly to low-FODMAP guidelines.
