  1. Ensure you have 1 pound of cooked, shredded chicken breast. You can use pre-cooked chicken or cook chicken breast as described in Monday's recipe and shred it.
  2. In a large bowl, combine the shredded chicken breast, julienned cucumber, julienned red bell pepper, and julienned radishes.
  3. In a small bowl, whisk together the fresh lime juice, white vinegar, chopped fresh cilantro, and black pepper to create the dressing.
  4. Pour the dressing over the chicken and vegetable mixture. Toss gently until everything is well coated.
