Instructions
- Ensure you have 1 pound of cooked, shredded chicken breast. You can use pre-cooked chicken or cook chicken breast as described in Monday's recipe and shred it.
- In a large bowl, combine the shredded chicken breast, julienned cucumber, julienned red bell pepper, and julienned radishes.
- In a small bowl, whisk together the fresh lime juice, white vinegar, chopped fresh cilantro, and black pepper to create the dressing.
