  1. Place diced sweet potatoes in a microwave-safe bowl with 2 tablespoons of water, cover loosely, and microwave on high for 5 minutes until just tender.
  2. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the par-cooked sweet potatoes, 1/2 teaspoon of the salt, and 1/4 teaspoon of the black pepper; sauté for 6 to 8 minutes until golden brown and crispy on the edges, then transfer to a clean plate.
  3. In the same skillet over medium-high heat, add the remaining 1 tablespoon of olive oil and the ground beef. Cook, breaking up with a wooden spoon, for 6 to 7 minutes until browned and cooked through to an internal temperature of 160°F.
  4. Stir the chili powder, ground cumin, garlic powder, remaining 1 teaspoon of salt, and remaining 1/4 teaspoon of black pepper into the beef. Add the black beans and sweet corn, stirring for 2 minutes until heated through.
  5. Assemble the bowls by dividing the seasoned beef, beans, and corn mixture alongside the crispy sweet potatoes. Top each portion with 1/4 cup of cottage cheese and garnish with chopped fresh cilantro before serving.

Notes

Par-cooking sweet potatoes in the microwave cuts total cooking time in half while keeping the texture tender inside and crispy outside.
