Ingredients
- 1.5 pound ground beef (80/20 lean)
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 2 tablespoon chili powder
- 1 tablespoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup water
- 1 tablespoon lime juice (fresh)
- 12 tortillas (corn or flour)
- 2 cup romaine lettuce (shredded, for serving)
- 1 cup cheddar cheese (shredded, for serving)
- 0.5 cup sour cream (for serving)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and 1 chopped yellow onion. Cook, breaking up the beef with a spoon, until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess grease.
- Stir in 2 tablespoons chili powder, 1 tablespoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute more, until fragrant.
- Pour in 1/2 cup water and bring to a simmer. Cook until the liquid has mostly evaporated and the beef is well-coated in the seasoning, about 3-5 minutes.
- Remove from heat and stir in 1 tablespoon fresh lime juice.
- Warm the tortillas according to package directions (microwave, oven, or skillet).
- Serve the chili lime ground beef in warm tortillas with shredded romaine lettuce, and optional shredded cheddar cheese and sour cream.
Notes
Add a few dashes of your favorite hot sauce for an extra kick! Leftovers are great for taco salads.
