Chili Lime Ground Beef Tacos

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and 1 chopped yellow onion. Cook, breaking up the beef with a spoon, until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess grease.
  2. Stir in 2 tablespoons chili powder, 1 tablespoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute more, until fragrant.
  3. Pour in 1/2 cup water and bring to a simmer. Cook until the liquid has mostly evaporated and the beef is well-coated in the seasoning, about 3-5 minutes.
  4. Remove from heat and stir in 1 tablespoon fresh lime juice.
  5. Warm the tortillas according to package directions (microwave, oven, or skillet).
  6. Serve the chili lime ground beef in warm tortillas with shredded romaine lettuce, and optional shredded cheddar cheese and sour cream.

Notes

Add a few dashes of your favorite hot sauce for an extra kick! Leftovers are great for taco salads.
