Ingredients
- 1 tablespoon olive oil
- 0.33 pound ground beef
- 0.5 yellow onion (sliced)
- 0.5 red bell pepper (sliced)
- 0.5 green bell pepper (sliced)
- 1 clove garlic (minced)
- 1 teaspoon chili powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 lime (juiced)
- 3 corn tortillas
- 1 tablespoon fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
- Add sliced yellow onion, red bell pepper, and green bell pepper to the skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
- Stir in minced garlic, chili powder, ground cumin, salt, and black pepper. Cook for 1 minute until fragrant.
- Remove skillet from heat and stir in lime juice.
- Warm corn tortillas according to package directions. Serve the Chili-Lime Beef Skillet mixture inside warm tortillas, topped with optional fresh cilantro.
Notes
For added spice, a pinch of cayenne pepper can be included with the chili powder. You can also serve this over rice if preferred.
