Chili-Lime Beef Skillet

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add sliced yellow onion, red bell pepper, and green bell pepper to the skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
  3. Stir in minced garlic, chili powder, ground cumin, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Remove skillet from heat and stir in lime juice.
  5. Warm corn tortillas according to package directions. Serve the Chili-Lime Beef Skillet mixture inside warm tortillas, topped with optional fresh cilantro.

Notes

For added spice, a pinch of cayenne pepper can be included with the chili powder. You can also serve this over rice if preferred.
