  1. Heat olive oil in a large, deep skillet or Dutch oven over medium heat. Add yellow onion and sauté until softened, about 3-4 minutes.
  2. Stir in garlic, chili powder, ground cumin, and smoked paprika. Cook for 1 minute until fragrant.
  3. Add rinsed and drained black beans, rinsed and drained kidney beans, canned diced tomatoes (undrained), vegetable broth, and frozen corn to the skillet. Season with salt and black pepper.
  4. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes, stirring occasionally, until flavors have melded and the sauce has thickened.
  5. Serve hot with store-bought cornbread or tortilla chips. Top with shredded cheddar cheese and sour cream, if desired.
