  1. Preheat oven broiler. Place poblano peppers on a baking sheet. Broil for 5-7 minutes, turning occasionally, until skins are charred and blistered. Transfer to a bowl, cover with plastic wrap, and let steam for 5 minutes. Peel, core, and dice the roasted poblano peppers.
  2. Heat olive oil in a large skillet over medium-high heat. Add Impossible ground and cook for 5-7 minutes, breaking it apart, until browned. Drain any excess liquid. Stir in taco seasoning, salt, and black pepper, cooking for 1 minute more.
  3. Prepare riced cauliflower according to package directions. Warm it gently in a microwave or a separate pan.
  4. To assemble bowls, divide riced cauliflower among 4 bowls. Top each with seasoned Impossible ground, diced poblano peppers, shredded Monterey Jack cheese, and diced red onion. Garnish with chopped fresh cilantro, diced avocado, and a dollop of sour cream or Greek yogurt if desired.

Notes

Look for a taco seasoning blend that specifically states 'no cumin' to adhere to your dislike. You can also make your own with chili powder, garlic powder, onion powder, paprika, salt, and black pepper.
