Ingredients
- 3 can chickpeas
- 1.5 cup quinoa
- 1 can crushed tomatoes
- 8 ounce baby spinach
- 4 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 1 tablespoon olive oil
- 1.5 teaspoon garam masala
- 1 teaspoon ground coriander
- 0.5 teaspoon salt
- 2 tablespoon lemon juice
Instructions
- In a medium saucepan, combine quinoa with 3 cups of water and 1/4 teaspoon of the salt. Bring to a boil, cover, reduce heat, and simmer for 15 minutes until fluffy; remove from heat.
- Heat olive oil in a large deep skillet or Dutch oven over medium heat. Add minced garlic and grated fresh ginger, stirring for 1 minute until aromatic.
- Add garam masala and ground coriander, toasting the spices in the warm oil for 30 seconds.
- Pour in crushed tomatoes, drained chickpeas, and remaining 1/4 teaspoon salt. Bring to a simmer, reduce heat to medium-low, and cook for 12 minutes to meld flavors.
- Fold in fresh baby spinach in handfuls until wilted, stir in fresh lemon juice, and serve hot over the cooked quinoa.
Notes
Lightly mashing a quarter of the chickpeas with the back of a spoon creates a naturally thicker, heartier sauce.
